3-Ingredient Buckeyes

Okay, we’ve got the Ohio State Buckeyes in a Bowl Game on New Year’s Day. We are so excited to cheer them on. Hoping they pull out a win. Is there anything else to have while watching the Buckeyes than to have peanut butter and chocolate Buckeye candy? How appropriate!

I’ve come up with a simple 3-ingredient Buckeye recipe you will love. They are easy to make and so delicious.

Ingredients:

3/4 cup heavy whipping cream
12 oz peanut butter morsels
12 oz chocolate chip morsels

Using a double boiler on low heat, heat the heavy cream to a VERY slight simmer.

Stir in the peanut butter morsels. Remove from heat. Stir until the morsels are melted and combined.

Allow the mixture to cool and then place in the refrigerator to chill and harden. You can also place in the freezer if you are in a hurry.

After the peanut butter and cream mixture has hardened, scoop out about 1 tbsp of the peanut butter mixture and roll into a ball. Place back onto the waxed paper lined baking sheet.  Repeat until all the peanut butter mixture is used.  Place the peanut butter balls back in to the refrigerator or freezer.

Melt the chocolate in a double boiler over low heat.  Stir until melted.

Dip the ball in the melted chocolate.

Place the buckeye on a baking sheet lined with waxed paper. Repeat for each peanut butter ball.

Place the baking sheet of buckeyes into the refrigerator or freezer to chill and harden the coating of chocolate.

Serve on a platter or in mini muffin liners.
