Strawberry Crumble Bars

Have you ever bought those strawberry crumble bars they sell in the granola bar/snack bar section of the grocery store? I sure have. They can get a little expensive for the few bars that you get in the box. If they aren’t on sale and I don’t have a coupon, they stay on the grocery store shelf. These strawberry bars are easy to make, and the recipe makes much more than you’ll get out of a box.

I like keeping homemade snacks around the house that are not only delicious, but easily portable. I like being able to grab one of these gooey crumbly strawberry bars and taking it on the road with me, or just simply eating it while watching some television. Believe me, these strawberry crumb bars are not only for snacking, but they are also great as a dessert, or with breakfast/brunch.

Ingredients:
Crust:
1 and ½ cups all purpose flour
6 tbsp unsalted butter, softened
¼ cup sugar

Filling
2 cups strawberry jam (you could even substitute another jam like blueberry, raspberry, or blackberry)
1/2 tsp ground cinnamon

Crumble:
¾ cup all purpose flour
3 tbsp unsalted butter, softened
3 tbsp sugar

White Chocolate Drizzle:
½ cup white chocolate morsels, melted
1 tsp vegetable oil

For the crust: Blend together softened butter, flour, and sugar.

It should resemble coarse crumbs.

Press into a foil lined baking dish sprayed with baking spray.

Bake the crust on 350 degrees Fahrenheit for 15-18 minutes. Remove from the oven carefully. *Use your oven mitts!

Next combine the strawberry jam and cinnamon and stir until combined.

Spread the jam over the crust.

Combine the crumble ingredients next. Blend together with a pastry blender or forks.

It should resemble coarse crumbs.

Sprinkle the crumble mixture over the jam.

Bake on 350 degrees Fahrenheit for 40-45 minutes.

Remove from the oven. Use your oven mitts! Allow to cool completely.  The jam will be very bubbly and hot; use caution.

While bars are cooling, melt the white chocolate morsels according to package instructions. Be careful not to burn the white chocolate, otherwise you’ll have to throw it out and start over. Stir in 1 tsp vegetable oil.

Using a spoon, drizzle the white chocolate over the bars. Allow the chocolate to cool and harden.

Cut the bars into squares and serve.
