Pancake Breakfast Sandwich

Breakfast is probably my favorite meal.  There are so many different things you can make and have for breakfast.  Pancakes are probably my favorite breakfast meal.  There’s just something about their soft-pillowiness and sweet syrup drizzled on top.  Now let’s get bacon involved…Bacon. Makes. EVERYTHING. Better!

A lot of people have probably seen or had the breakfast sandwiches made at that fast-food place that has Mc-everythings that uses a griddle cake or pancake as the bun of the sandwich.  I love a good egg and bacon sandwich, so when I can’t decide if I want pancakes or bacon and eggs, I’m making both and eating it as a sandwich!

One of the issues about making pancakes is that when you make pancakes, the recipes tend to make a lot.  I don’t know about you, but I’m not making breakfast sandwiches for twelve people often (if at all…but if you are…more power to you!)  Usually, it’s just me eating, or just me and Jon eating, so it’s nice to have a small batch pancake recipe handy.

So, to make the pancakes into a bun, I use an egg ring.  They keep the pancakes uniform in size, then when frying the egg using the egg ring, the egg will also be the same size as the bun.  There are all kinds out there for sale online, so find the kind that suits you best.

Pancake Ingredients:

½ cup all-purpose flour

½ cup milk or nondairy milk

1 tsp baking powder

1 tsp canola oil

¼ tsp salt

1 tbsp maple syrup

Butter to grease the pan, or nonstick cooking spray

Sandwich Topping Options:

Fried egg

Cooked bacon slices

Cooked sausage patties

Sliced cheese

Cooked ham slices

To make the pancakes, combine the pancake ingredients, except the butter, in a bowl and whisk to combine.  Be careful to not overmix.  If there are some lumps, that is fine.

In a preheated skillet on low-medium heat, melt the butter.  If using the egg rings, place the egg rings on the skillet, then ladle pancake batter into each ring.  The ones I used allowed me to make two small pancakes.  The number of pancakes will be determined by how large or small the egg rings are, or by how much batter is used.

Carefully flip the pancake over halfway through cooking using a spatula or pancake turner.  If a little bit of the batter oozes out, just push it off out of the way with a spatula…you can see some of the pieces I did that with.  Once cooked through, remove from heat.  Once the pancakes have cooled enough to handle, the pancakes can either be cut in half carefully with a serrated knife, or just use two pancakes for the bun…no judgement here.

Cook your sandwich toppings if you haven’t already.

Top the bottom pancake bun with whatever toppings you’ve decided to use.  I used a fried egg and bacon slices, but you can get creative and use whatever toppings you like. 

Place the top part of the bun on top to finish of your sandwich!
