Spiked Vanilla Iced Coffee

 

I know, I know, it’s been awhile since I’ve posted a recipe.  Life has been super busy the past few months, between work, school, and a couple mini-vacations sprinkled in.

On one of the mini-vacations, Jon and I went to Florida to celebrate our 10th wedding anniversary.  We spent some time at the beach, the pool, a few breweries, and of course, at a few really good places to eat.  One place we liked so much, we went there two days in a row.

Florida was really hot, and as much as I love coffee and need my fix in the mornings, it was just too hot for hot coffee.  The breakfast place we loved had the most delicious iced vanilla coffee.  I ordered it both days we went.  But, what made it even better was that it was spiked!  Heck, I was on vacation, why not a little Spiked Vanilla Iced Coffee for breakfast?  Oh yeah, they added some Irish Crème liqueur too!  And you know me, I had to come home and make my own!

 

Ingredients:

2 tsp sugar (use more or less if you prefer)

1 tbsp warm water

¾ cup ice

1oz vanilla vodka

5-6oz cold brew coffee (unsweetened)

1oz Irish crème liqueur

 

 

                Using a 12 oz cup or mason jar, stir the water and sugar together until the sugar is dissolved.

 

                Add in the vanilla vodka and cold brew coffee and stir to combine.  Gently add the ice to the cup.

 

                Pour the Irish crème liqueur over the top and serve!

 

The Spike Vanilla Iced Coffee is definitely one of my favorite cocktails right now!

Ingredients
