Barbecue Pineapple Shrimp

Serves: 4 servings
- 3 slices of bacon, chopped
- 1 lb uncooked medium or large shrimp, peeled, deveined, and tails removed
- 1 and ½ cups chopped fresh pineapple (or canned pineapple that’s been drained)
- 1 cup barbecue sauce
- Cook the bacon in a skillet until crisp.
- Add the shrimp and pineapple to the skillet and cook until the shrimp turn pink/opaque.
- Stir in the barbecue sauce, cook for an additional 1-2 minutes, until the barbecue sauce is heated through.
- Serve the BBQ Pineapple Shrimp with your favorite sides, such as Baked Cheesy Grits or rice dish.
