Spinach Apple-Cranberry Salad

Serves: 4 servings
- About 4 cups baby spinach
- ½ Granny Smith apple, thinly sliced (core and seeds removed and discarded)
- ¼ dried cranberries
- ¼ dry roasted almonds
- ¼ cup shredded mozzarella cheese
- Thinly sliced shallot (about a couple tbsp worth)
- Store bought raspberry vinaigrette dressing
- *Optional: Grilled Chicken
- Layer the spinach onto a platter. Top the spinach with the remaining ingredients evenly.
- Serve with the raspberry vinaigrette on the side, so everyone can use their desired amount.
