Gouda Beer Cheese Fries

Seasoned fries smothered in a gouda beer cheese sauce, topped with crispy bacon, cheddar cheese, and some fiesty jalapenos for a kick

Ingredients
  • 2 slices chopped bacon, cooked until crispy
  • 4-6 cups frozen fries, cooked by your preferred method according to package directions
  • 1 tbsp butter
  • 1 tbsp cornstarch
  • ½ cup milk
  • 2 tbsp beer (such as an ale)
  • 1 cup grated gouda cheese
  • ⅓ cup shredded cheddar cheese
  • 1-2 tbsp chopped jalapeno slices (optional)
  • Salt and ground black pepper to season fries to taste
Instructions
  1. Cook the chopped bacon in a skillet until crispy. Remove the bacon from the pan with a spoon and drain on a plate lined with a paper towel. Set aside.
  2. Cook the fries until they reach desired crispiness according to your preferred method of package directions.
  3. Line a baking sheet with parchment paper and using tongs, spread the fries out in a single layer and season the fries with salt and pepper to taste.
  4. In a small bowl or cup, stir the milk, beer and cornstarch together until the cornstarch is dissolved. Set aside.
  5. Melt the butter in a small saucepan on medium heat.
  6. Whisk the milk and beer mixture into the butter and bring to a simmer, stirring occasionally. Lower the heat to low-medium heat and cook until the mixture has thickened, stirring occasionally.
  7. Remove the thickened milk and beer mixture from heat and whisk in the grated gouda cheese until almost smooth.
  8. Preheat the oven to 375 degrees Fahrenheit.
  9. Spoon the gouda beer cheese over the fries (use as much or as little as you like). Top the fries with the crispy bacon pieces. Sprinkle the cheddar cheese over the top. Spoon the chopped jalapenos over the top.
  10. Bake the fries in the oven for about 5-10 minutes or until the cheese has melted.
  11. Serve the Gouda Beer Cheese Fries with your favorite brewery beverage.
