Bacon and Garlic Sauteed Spinach

A delicious pairing of bacon and spinach together with shallots and garlic for the perfect side dish for two!

Ingredients
  • Ingredients:
  • 2 slices pepper bacon, chopped
  • ½ shallot, chopped
  • 2 cloves garlic, chopped
  • 2 tbsp dry white wine (such as Chardonnay)
  • 4 cups fresh baby spinach
  • ¼ tsp salt
  • ⅛ tsp ground black pepper
  • ⅛ tsp crushed red pepper
  • Lemon wedge
Instructions
  1. Crisp the chopped bacon by cooking on medium heat. Remove the bacon from the pan and place on a paper towel lined plate. Set aside.
  2. Add the chopped shallot to the sauté pan, and cook until translucent, about 1-2 minutes. Reduce the heat to low and add the garlic to the pan and cook for 1 minute. Add in the white wine.
  3. Wilt the spinach in the pan for about 1 minute.
  4. Toss the spinach with the shallots and garlic in the pan. Add in the salt, pepper, and crushed red pepper, toss to combine. Cook until the spinach is tender.
  5. Add the chopped bacon back into the pan and heat for about 30 seconds to 1 minute.
  6. Transfer the sautéed spinach to a serving dish and squeeze the juice from the lemon wedge over the spinach.
