Ingredients
  • 2 sticks, unsalted butter, room temperature
  • ½ cup sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 and ½ cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • ⅛ tsp ground clove
  • 1 and ½ cups old fashioned oats
  • ¾ cup raisins
  • ½ cup white chocolate chips
  • ½ cup butterscotch or peanut butter chips
Instructions
  1. Start by combining the wet ingredients: Butter, sugar, and brown sugar. Mix until all of the sugars and butter are combined.
  2. Add the eggs and vanilla extract to the sugar and butter mixture, and stir until all is combined.
  3. In a separate bowl, sift the flour, baking soda, salt, cinnamon, and ground clove together.
  4. Stir the dry ingredients into the wet ingredients.
  5. Fold in the oats, raisins, white chocolate chips, and the butterscotch or peanut butter chips.
  6. Cover the oatmeal cookie dough and refrigerate for about 30 minutes to 1 hour. *This step is crucial to prevent the cookies from spreading out too much during baking.
  7. Allow the cookie dough to sit out for 5-10 minutes at room temperature. Roll the cookie dough into balls and place a few inches apart on a baking sheet. I use about ¼ cup of dough for each ball.
  8. Bake for 15-18 minutes at 350 degrees Fahrenheit. Allow the Oatmeal Raisin Cookies to cool on a cooling rack until they are completely cool. Makes about 2 dozen.
