Grilled Chicken Bacon and Pesto Sandwich

 

We have restaurants popping up all over where we live. This area of South Carolina is booming! We love to go and support our local food joints, but it’s not always so easy on our wallets. As you know, I like to see if I can come up with my own versions of food from restaurants right at home. It’s a lot less expensive, just as tasty, and a lot of fun!

 

When Jon is working on the weekends, his company has a local restaurant cater their lunches. He came home raving about a pesto sandwich that he ate at work. On his day off, he went to the sandwich shop and picked up a chicken and pesto sandwich for us to share. It was delicious! As usual, the wheels in my head started turning to see if I could figure out how to make the sandwich, right in my very own kitchen.

 
Let me tell you, with a few tweaks and additions (like bacon), it was every bit as good, if not better!

 

 

Ingredients:
2 Slices sandwhich bread
Spreadable butter
Pesto (homemade or from a jar)
Grilled boneless, skinless chicken breast (already cooked)
2-3 slices cooked, crispy bacon strips
Sliced or shredded mozzarella cheese
2 thin slices of tomato

 

 

Spread a thin layer of butter on one side of each slice of bread. Turn the butter sides down to assemble the rest of the sandwich.

 

Spoon some pesto on one side of one of the pieces of bread. Layer mozzarella cheese on top of each slice of bread.

 

 

Top one side of the bread with the tomato slices; and, top the other side with the chicken and bacon.

 

Put the sandwich together. Preheat a non-stick skillet on medium-high heat. Carefully place the sandwich in the skillet with a spatula and cook until golden brown on the first side. Flip the sandwich over with a spatula, and cook the other side until golden brown (similar process to making grilled cheese). (My apologies for not taking photos of this part. I was making this on the biggest football game day of the year, so there was A LOT happening in our kitchen.)

 

Cut the sandwich diagonally into triangles and serve! It is soooooo good!!! 🙂
