Barbecue Pineapple Shrimp

BBQ Pineapple Shrimp Skillet

After I picked Jon up from work this weekend, we went to our local roadside seafood stand to pick up some yummy local shrimp. My whole plan was to make Bacon Wrapped BBQ Shrimp, but I was feeling lazy after painting all day (I have a new furniture painting addiction and I‘m obsessed), and I didn’t want to spend the time wrapping the shrimp in bacon and putting them all onto skewers. Jon came up with the idea to put the shrimp in a skillet on the grill. So the idea for our BBQ Pineapple Shrimp was born!

You still get the same great taste and flavor as the Bacon Wrapped BBQ Shrimp, but the prep time is reduced tremendously! You can make this inside on the stovetop or outside on the grill. It has a quick cooking time, so it’s a great meal during the workweek or for a time when you just need to get dinner on the table fast. I’m going to be making this a lot!

Ingredients:
3 slices of bacon, chopped
1 lb uncooked medium or large shrimp, peeled, deveined, and tails removed
1 and ½ cups chopped fresh pineapple (or canned pineapple that’s been drained)
1 cup barbecue sauce

Crisp Bacon in skillet

Cook the bacon in a skillet until crisp.

Cooked Shrimp and Pineapple

Add the shrimp and pineapple to the skillet and cook until the shrimp turn pink/opaque.

Stir in the barbecue sauce, cook for an additional 1-2 minutes, until the barbecue sauce is heated through.

Barbecue Pineapple Shrimp

Serve the BBQ Pineapple Shrimp with your favorite sides, such as Baked Cheesy Grits or rice dish.
