Okay, we all need a quick recipe for the week, and I LOVE a great salad.  The Spinach Apple-Cranberry Salad has a little pop of sweetness from the cranberries, a slight bit of tartness from the apples, and a little tang from the shallots.  If you top the salad with some grilled chicken, you’ve turned a side salad into a meal!

Ingredients:

About 4 cups baby spinach
1/2 Granny Smith apple, thinly sliced (core and seeds removed and discarded)
1/4 dried cranberries
1/4 dry roasted almonds
1/4 cup shredded mozzarella cheese
Thinly sliced shallot (about a couple tbsp worth)
Store bought raspberry vinaigrette dressing

*Optional:  Grilled chicken, cut into bite-sized pieces

Directions:
Layer the spinach onto a platter. Top the spinach with the remaining ingredients evenly.

Spinach Apple Salad

Serve with the raspberry vinaigrette on the side, so everyone can use their desired amount.
