Turkey Meatloaf

Have you seen the prices of ground beef/chuck lately? The prices have really gone up! I’ve gone from buying ground chuck every week to maybe once or twice a month. I’ve been buying a lot of chicken and ground turkey lately. Not only has the price been better, the meat is a lot healthier too.

It’s getting pretty warm here in the South already, so we’ve been working on some lighter meals. I love a good meatloaf, but ground chuck/beef gets a little heavy in the summertime. When you use ground turkey, it lightens the meal up and it’s a little healthier.

Ingredients:
1 lb ground turkey
1 egg
½ cup breadcrumbs
¼ cup finely grated parmesan cheese
½ tsp salt
¼ tsp ground black pepper
1 tsp granulated garlic
¼ cup fresh chopped parsley
¼ cup roasted red pepper, chopped
1 medium shallot, chopped
¼ cup Italian dressing
½ cup shredded mozzarella cheese

Preheat the oven to 375 degrees Fahrenheit.

Combine all of the ingredients, except for the mozzarella cheese, in a mixing bowl.

Fold the ingredients until they are all combined. You may need to use your hands to fully combine the ingredients.

Shape the uncooked turkey meatloaf into a loaf shape. Place on a greased baking rack on top of a foil-lined baking sheet. You can also place the meatloaf into a greased loaf pan, if you prefer.

Top with the mozzarella cheese.

Bake on 375 degrees Fahrenheit for about 50-60 minutes, or until the internal temperature of the turkey meatloaf reaches 165 degrees Fahrenheit.

*Tip: If your cheese starts to get too brown, you can tint the meatloaf with some foil to slow the browning and prevent the cheese from burning.

Remove the turkey meatloaf from the oven and allow to rest and cool about 5-10 minutes before slicing and serving.
