Avocado and Egg Toast

One morning I was watching Live! With Kelly and Michael, and their guest was Zoë Kravitz. She and Kelly were talking about eating mashed avocado on toast. I’ve recently started eating avocados, and I thought the idea sounded delicious. I got to work on my own version, and I have eaten the Avocado and Egg Toast almost everyday for the past two weeks. I’ve found that I feel pretty great and energized after I eat this for breakfast. I think I could call this a “Justin Approved Breakfast” (my brother-in-law eats one avocado everyday…)

Ingredients:
2 slices soft-style whole grain bread, toasted (I use a bread that is 130 calories for two slices of bread)
½ avocado, skin and pit removed and discarded
Small pinch of salt and pepper each
1 hard boiled egg, peeled and sliced
Lemon or lime juice, only a few drops are needed

In a small bowl, mash the avocado with the salt, pepper, and a small drizzle of lemon or lime juice. Mash until smooth.

Spread the mashed avocado onto each slice of the toasted bread.

Top each piece of toast with the hard boiled egg slices.

If you’re an avocado fan like I am, be careful, you may become addicted to the Avocado and Egg Toast!

  1. I’ve been eating this for some time now, but I use a fried egg on top instead of a hard boiled. Just before I break the egg yolk so it can flow over my avocado and be soaked up by the bread, I sprinkle with a little ground red (cayenne)pepper. Just another variation to try if you like things hot. Yum!

    1. That sounds good, I’ll have to try that! I’ve also tried it with scrambled eggs and put bacon on top to make an egg sandwich. Jon didn’t realize I put avocado on the sandwich and gobbled it up! The cayenne pepper is a great idea!
