Game Day Food: Fire Roasted Chili

So on game day, there is nothing better than a big pot of chili! It’s probably one of the most common game day foods. This one differs from my regular slow-cooker chili, because it is spicier and meatier…and it has a beer in it! The fire roasted tomatoes just adds a great extra depth of flavor!

I also cook this in the slow-cooker. Slow-cooked chili is the way to go. It just allows all the ingredients to really come together. It’s a great meal to warm yourself up on cold day!

Here’s what you’ll need:

For the chili:

1lb ground beef
1lb ground sausage
½ tsp salt
½ tsp ground black pepper
28 oz can diced, fire roasted tomatoes
15 oz can of kidney beans, drained
10 oz can diced tomatoes with diced green chilies (I use the original, but if you like mild or hot, use your preference.)
½ cup chopped onion
½ cup reduced sodium beef broth
1 bottle-12 oz beer (I used a lager style beer)
Chili Seasoning Mix (see recipe below)

For the Chili Seasoning Mix:

1 tbsp chili powder
1 tbsp paprika
2 tsp garlic powder
1 tsp ground cumin
1/8 tsp ground cayenne pepper
½ tsp salt
½ tsp ground black pepper
1/8 tsp allspice

Combine the seasoning mix ingredients, and stir to combine.

Let’s move on to the chili!

Start by browning the ground beef and ground sausage in a skillet over medium heat.  Add the ½ tsp salt and ½ tsp ground black pepper.

While the meat is cooking, prepare the other ingredients in the slow-cooker.  Pour the diced, fire roasted tomatoes into a slow-cooker.  Give them a little mash with a potato masher.

Drain the kidney beans.

Add the kidney beans, diced tomatoes with diced green chilies, and chopped onion to the slow-cooker.  Stir to combine.  Next add in the broth and beer.

Spoon in the cooked ground beef and ground sausage.  Stir to combine.

Place the lid on the slow-cooker.  Cook on low for 8 hours.  After the chili has cooked for 8 hours, turn the slow-cooker to warm, so the chili stays nice and hot during the big game and everyone can serve themselves.

Sliced jalapenos

Tortilla chips
Chopped onion
Diced green onion

Grilled cheese sandwiches
