Gourmet BBQ Chicken Pizza

Pizza is a big deal at our house.  We love pizza and all kinds.  I have really come to love (imagine that)  BBQ chicken pizza.  The first time I ever had BBQ pizza, I was hooked!  It has been my preference of pizza ever since.  We enjoy experimenting with different kinds of toppings, instead of the traditional meat and red sauce pizzas.  Pizza can be gourmet, and it can be made at home.

Here’s what you’ll need for BBQ Chicken Pizza:

Caramelized Onions:

2 tablespoons unsalted butter

Pizza Ingredients:

1lb pizza dough (store-bought or homemade)

1 cup of your favorite BBQ sauce

1 cup shredded rotisserie chicken

1/2 cup caramelized onions

½ cup chopped tomato

½ cup chopped roasted red peppers

3 tablespoons chopped sun dried tomatoes

1 cup shredded fresh mozzarella cheese

1 cup shredded smoked cheddar cheese

1 tablespoon dried basil

1 cup roughly chopped arugula

 

Garlic Butter Sauce:

3 tablespoons melted butter

1 tsp garlic powder

½ teaspoon dried dill

Combine the ingredients.

 

Start by working on the caramelized onions.  Melt 2 tablespoons of butter in a saucepan on medium heat.

Add the sliced onions to the pan.  Cover and let cook down for about 10-15 minutes.  Stir occasionally.

Roll out the pizza dough into desired shape.  Par-bake the dough in the oven on 425 degrees Fahrenheit for about 10 minutes.

Spread the BBQ sauce on the dough.

Next, top pizza with the onions, chicken, roasted red peppers, and sun dried tomatoes.  Sprinkle on the dried basil all over.

Combine the melted butter, garlic powder, and dried dill in a small bowl. Stir to combine.
Pizza Directions:
Preheat the oven at 425 degrees Fahrenheit. Roll out the pizza dough on a lightly floured surface to desired shape. Par-bake the dough for about 5-10 minutes.

Remove the dough from the oven carefully; use your oven mitts, it will be hot! Spread the BBQ sauce all over the dough. Next, pile on the toppings: chicken, caramelized onions, chopped tomato, roasted red peppers, sun dried tomatoes, shredded mozzarella cheese and basil.

Brush the outer crust with the garlic butter sauce using a pastry brush.

Bake pizza on 425 degrees Fahrenheit for 10-15 minutes, or until the crust is golden brown.

Carefully remove the pizza from the oven; use your oven mitts as it will be hot! Top the pizza with the chopped arugula. Cut pizza into slices and serve.
